I love recipes that are quick and easy. This one is so easy that Brad requests it at least once a week. I probably shouldn’t make them as much as I do, but I will do
almost anything to make him happy. 🙂 I have made these cookies with Splenda before and I thought they turned out just as good!
Peanut Butter Cup Cookies
1 cup of sugar (or sugar sub)
1 cup of peanut butter
16-18 small reese cups, unwrapped
Preheat oven to 350 degrees. Combine egg, sugar and peanut butter in a bowl. Roll the cookies up in balls and place them in a mini muffin pan. Bake 8 minutes or so. Remove from the oven and while they are still hot, place a Reeese cup in the middle and gently press down. Try to let them cool for a few minutes (I know it’s hard to wait) and then dig in!
Another option is to combine the first three ingredients and bake them like regular cookies. We like them with Reese cups better – it puts them a little over the edge – yummy!
